I happened to see a new box of gluten free cookies at Walmart.
         GOODIE GIRL COOKIES MINT SLIMS
They are exactly like I remember the Girl Scout's mint cookies tasting and 
are delicious out of the box and from the freezer. My non celiac family members love them too.
When I checked their site

I see that they make 5 different flavors. My area Walmart told me will only sell this one.
The site lists other stores-Whole Foods, Target, etc but I have not found them near me.
It also seems they can be ordered directly from their site and on Amazon.
Well worth trying. They are now my favorite cookie.
