hello fellow listies - 
Yesterday I made the Snoballs from this cookbook - all I can say is 'WOW!' They taste just like I remembered, including the cake texture. Made them with a friend who is not GF (this is definitely a 2 person recipe) and she was blown away too. 

A few notes:
I am in Switzerland so had to make a couple of substitutions for items not available here. For the flour, I used 1 1/3 cups rice flour, a heaping 1/3 c sweet rice flour, and about 1/6 c tapioca starch. Instead of brown sugar I used 1T + 1 t molasses. For liquid I used 1c water and 1 1/2T milk. I used the 7-minute cream filling (easy to make and delicious). 

We made 12 full size muffins and 12 mini-muffins, and used the minis to top the big ones after they were filled with the cream. The muffins were a lovely, dense dark cake -fabulous on their own, or would make a really great trifle base.

Our only stumble was with the marshmallow fluff, which didn't really get sticky -might try that again this morning, if the remaining cakes make it past breakfast. Next time I get to the US I will bring back a jar of marshmallow fluff.

These were AMAZING and well worth the work - a special treat for sure. I will definitely try more recipes from this book.
