I suppose everyone is different but I have been a celiac (allergic) for
7 years and a type 2 for 2 years. I absolutely have to adhere to a
celiac diet and any spikes I have had were never associated with the
eating of the prohibited materials.  However, I have had highs connected
to the injestion of fatty materials, alcohol (and beer in particular)
and of course sweets.

So the question is, could it be possible that your child could be occasionally
sneaking  some forbidden sweets he forgot to tell you about? Especially
ones that contain fat (like chocolate bars)??
