Hi Mary~ I realize this diabetes stuff is all new to you, because it is
your spouse to be that is diabetic. But you had mentioned something
about *sugar intake* as the item you are concerned about.

Diabetes is a very complex disease..... but the current mode of thought
in diabetic nutritional circles these days is CARBOHYDRATES.

All carbohydrates are broken down into sugar by your system.
When looking at nutritional fact labels it's the "TOTAL CARB" number you
need to pay attention to. And those tricky "serving size" numbers.

So what I am saying is a serving of rice (very high carb) can zing out
blood sugar levels as much as if a diabetic ate a pint of ice
cream--blood glucose (bg) wise.

A carb is a carb kind of way of thinking.

Unfortunately, most all of the celiac safe grains- rice, corn are very
high carb & for those with both diseases, have to really limit the
amount of gf grain foods we eat or deal with elevated bg levels  =  (

So it's not "sugar' in general the diabetic needs to be looking out for.
It IS a major juggling act though!

I'm sure you will figure out a great wedding cake-- I had asked what
region you live in because, for instance, on the NE coast there is a
specialty chef who does gourmet GF meals & baking.
