After much experimenting,  I have come up with a popsicle recipe that my
kids like,  that is healthy and without many carbs.  My kids aren't used
to eating sweet substitutes and I don't do nutri sweet so this may taste
bland to those who have aquired sweeter taste buds.  I suppose more
stevia may  take care of this.

In a blender,  blend :  one package of silken tofu
                                       one half pint of heavy cream
                                       one package of unsweetened koolaid
 (orange seems best to mask flavor of tofu)
                                       one teaspoon of stevia extract
powder

Spoon into popsicle molds and freeze.   They taste a bit like
creamsicles.


Depending on how many carbs are in your tofu package and how many
popsicles you make,  will end up being how many carbs each popsicle is.
We have it down, so each popsicle is less than one carb. They are a good
source of protein and a bit of fat for growing children, without the
carbs!
