I'm not sure what kinds of sugar free/aspartame free products you're looking
for, but if you go to the splenda.com site, I believe they have a list of
products that use splenda as a sweetener.  Also, if you look for low carb
foods on the net (might start at lowcarbluxury.com, they've got a list of
vendor sites) you will find a lot of sugar free/aspartame free foods, many
of which are also gluten free.

As far as getting your sugar under control and the pasta question, I have
had very good luck w/ cutting out all pasta, bread, crackers, and cake or
cookie type things - which would also make a g/f diet easier (I am still
trying to get my celiac diagnosed, so I haven't stopped eating gluten yet).
Even regular pasta was impossible for me to eat w/o doing vast amounts of
insulin (and even then my b/g would have a high peak), I can't imagine
trying to eat a higher glycemic pasta - but actually, the way pasta affects
me, I can hardly believe it's only a 41.
