Hi all-I have been reading your postings for some time now. My husband
is 40 and has juvenile onset diabetes (diagnosed when he was 13) Two
years ago he was dx. with Celiac...life has been a struggle since then.
I make most all of his "treats" and bread, but we have been having lots
of highs and lows with his blood sugars. Since I'm a stay at home mom,
and he works crazy hours and goes to school I try to "take care of the
food thing" but lately I am getting discouraged. Dan we travel often too
and I just bring the GF food along with me so we can stop someplace and
order a hamberger /no bread and put it on the rolls I make. It is tough,
but the entire family has learned to make adjustment. The kids know we
have to eat according to Dad's schedule, and now we have to eat
according to Dads schedule and what he can have. I even brought along
his bread, rolls, crackers, cereal, etc. when we went to Disney. The
people at the plane terminal thought I was nuts and actually were giving
us a hard time, until I pulled out a MD note stating his need for GF
food. It is difficult to be so limited in food and to be soooo scheduled
with insulin, food and testing but perhaps more "back and forth" between
people who live this will help us all. God Bless and thanks for
"listening"
Sandy
