sorry to hear about your daughter. 
 
In one of my recent blogs I addressed this issue in a roundabout way. Go to http://360.yahoo.com/diabetesavoidancecoach and look through the past posts.
 
From my clinical (natural medicine) experience there is a strong link with a possible risk of developing pre-diabetes and diabetes --> midriff obesity (beer-belly). 
Overweight, possible adrenal-thyroid imbalances go with it --> padding / storage around the hips. 
Bloating, brain fog, lack of focus, fatigue, sleep issues, occasionally even fibromyalgia-like symptoms go along with that. 
 
The strongest link appears to be the underlying intestinal inflammation that does not allow for proper mineral absorption. 
 
Approach:
100% gluten-free!! 
- I suspect that there is still some gluten in her diet. As little as 1 gram can retrigger intestinal inflammation and malabsorption. Check again. You can find more info on the Nutrition page on my website www.ndocroth.com Things like maltodextrin, hydrolized vegetable proteins, etc. may add to the contamination and must be avoided.
 
In addition, with PCOS I also suggest low-carbohydrate diet. 
Cut out ALL or mostly all grain carbs for now--even the gluten-free ones--because of the carbohydrate action on the insulin mechanism. That means maximum 6grams for breakfast (1/2 slice), 12 grams for lunch and 12 grams for dinner in grain carbs. READ ALL LABELS - the fine print, not just the front of the box.
 
Get all carbs from vegetables and there too avoid the starchy ones (carrots and other root vegetables, squash). - In short approach it with a diabetes avoidance regimen.  

Avoid any prescription or over the counter Rx - they may contain hidden gluten. 

Avoid ALL soda drinks - diet or otherwise - since they acidify our already too acidic bodies. 1 can a day will slow down our metabolism and affect our mineral balance. 

In addition consider a 2 to 1 Calcium to Magnesium supplement with D3. Make sure it is in citrate form. We cannot absorb carbonate, elemental, and other forms.
