My personal experience is that palatability increases exponentially the longer I’m on a zero-carb/limited protein regimen.  It’s completely counterintuitive, I realize.  But my most deeply thrilling food experiences, which before paleo were associated with Mom’s chocolate cupcakes or a caramel shake, have been on day eighteen where I’ve bitten into a nice bacon-wrapped filet mignon.  There is no higher high for me, food wise.
