Robert,
Is this happening when you copy a document from the My Documents folder or does it happen from inside of a document? If it's happening from a document please specify the program and version number you're using to read the document.
What version of NVDA is this happening with? Telling us that it's happening with the latest version doesn't tell us what version you are using.
Are you running any add-ons? If so try disabling them to see if the behavior changes.
Regarding NVDA saying "unknown" try running the Com Registration Fixing Tool. To do this press insert+N to open the NVDA menu. 
Arrow down to Tools and press enter.
Arrow down to Run Com Registration Fixing Tool and press enter.
Read the warning dialog and then proceed to run the tool which should only take a few seconds to run.
Next, restart your computer and see if the "unknown" message is still there.

Since the updated version of NVDA has come out, I've been experiencing issues with several properties inside of my documents.namely, not talking to me when I try to copy and paste. 

Also, when I try to open a document, it usually says "Unknown" beore it finaly opens, if at all. Sometimes I have to use the contect key and go to "Open Up"

Windows 10 and the latest version of NVDA before the update
